Lunch Box Lemon Rice (Yellow Rice)

Lemon rice which is also fondly called as Yellow rice is the favorite variety rice of many people. By adding some veggies to it it can be made more colourful, attractive and nutritious. This type of Lemon rice is very easy to make, Novel to serve in parties and friendly to carry for picnics and travel also. Ingredients to make Party Lemon Rice:

 (Serves four people)

Boiled Rice 1 bowl (Cooked from 2 cups of rice)

Lemon juice extracted from 2 big lemons

Green Capsicum chopped  1/2 cup

Finely chopped tomatoes 1/4 cup (scoop out the seeds and chop the tomatoes)

Curry leaves and Cilantro

Green chillies and red  chillies 2 each

Hing powder 1/4 tea spoon

Sesame oil 2 table spoons

Turmeric powder 1/2 tea spoon

Mustard seeds, Chana dhal, Goundnut and Cashews for seasoning

Salt as required



 

Method for making Part Lemon Rice:

 

 

 

 

 

 

 

 

 

 

 

 

 

 

1. Add required salt to the lemon juice and keep aside.

 

2. Allow the boiled rice to cool in a broad vessel.

 

3. Heat a Kadai with Oil.

 

 

 

 

 

 

 

 

 

 

 

 

 

4. Add Mustard seeds. After they splutter add the green chillies and red chillies. Then add the chana dhal, groundnuts and Cashews.

 

5. When they tend to change their colour, add the capsicum and fry for 10 seconds, Then add tomato pieces and Turmeric powder.

 

6. Fry them together for 10 more seconds.

 

7. Now switch off the stove and pour the lemon juice mixed with salt into the kadai.

 

 

 

 

 

 

 

 

 

 

 

 

8. Immediately transfer the mixture into the broad vessel that has boiled rice.

 

9. Mix gently well.

 

10. Garnish with curry leaves and Cilantro.

 

 

Note:

Lemon juice should not be added when the stove is on.

Grated carrot and finely chopped ginger can be added to make it more colorful and spicy.

  1. Very popular dish in Karnataka it is called as Chitranna for the religious functions tomato is not added and can be avoided since lemon has its own flavour and taste
