Puffed Rice Vegetable Upma - The quickest breakfast

Puffed rice is made of both Paddy and Beaten rice (Poha). Both are easily digestible, very light and rich in essential fatty acids and dietary minerals, very low in cholesterol!! Variety of dishes can be made with this wonderful traditional ingredient. Try this healthy breakfast that can be made very easily and quickly which fills your stomach yet makes you to feel light....

Ingredients for making Puffed Rice  Vegetable Upma:


Puffed rice 250 gms (1 large bowl)
Finely chopped Onions, Green Vegetables and green peas of your choice
Slitted green Chillies 3
Lemon juice 2 tea spoons
Roasted Peanuts 2 tb spoons
Salt to taste
Turmeric powder 1/4 tea spoon
Coriander leaves and curry leaves
Oil 1 tb spoon
Mustard seeds, urad dal and chana dal for seasoning



How to make Puffed Rice  Vegetable Upma?


Heat a pan with oil.
Do the seasoning with mustard seeds and dals.
Once they splutter add the turmeric powder, onions and green chillies and fry.
Then add the green peas, curry leaves and other vegetables with salt.

Stir them well. Add the roasted peanuts.










While they are getting cooked, take the puffed rice in strainer and show it in the running water for few seconds.
Squeeze them out without water and add to the pan.
Stir well.










Switch off the stove.
Add the lemon juice and coriander leaves.
The healthy breakfast is ready to serve now.
