Potato Stew

An easy, creamy and comforting side dish for Aappam, Puttu, Poori, Chappathi etc., An authentic cuisine of Kerala in which the coconut milk and fresh spices are used with the aroma of coconut oil. A truly delicious side dish....

Ingredients for making Potato Stew:

Well boiled Potaoes 3
Thinly Sliced Onions 2
Slitted green chillies 5
Finely chopped Garlic from 6 pods
Finely chopped ginger 1 tea spoon
Cloves 3 or 4
Cinnamon sticks 2
Cumin seeds 1/2 tea spoon
Curry leaves few
Thin coconut milk 250 ml
Thick coconut milk 100 ml
Coconut oil 4 tea spoons

How to make Potato Stew?

  • Pressure cook the potatoes to soft, peel off the skin and crush them roughly , keep aside.
  • Heat a pan with coconut oil and do the seasoning with the cumin seeds.
  • Once they splutter put the cloves and cinnamon and give a stir.
  • Then fry the onions, green chillies, garlic and ginger pieces till the colour changes.
  • Now add the potatoes with salt and mix well.
  • Pour the thin milk to the pot and allow them to boil for five minutes till the spices and aroma blends well with the potatoes.
  • Switch off the stove and add the thick coconut milk.
  • Add fresh curry leaves.
