Sweet Puttu / Rice flour in Jaggery

A traditional, age old sweet made as an offering to Goddess during Navaratri. My hubby's sister is an expert in making this. She visited us recently and I made this in her presence & got the certificate of success too! A long time wish to make this on my own has come true. It is very auspicious to make during Navaratri and also I can say it is a healthy dessert or sweet since very little ghee is only used. There is no any chance of getting it flaw if you follow this method...

  • Cooking time : 30 to 40 mins

Ingredients for making Vella Puttu: 

  • Raw rice / Pachai arisi 1 cup
  • Powdered jaggery (Mandai Vellam) 3/4 cup
  • Green cardamom powder 1/2 tea spoon
  • Cashews and finely chopped coconut pieces roasted in ghee 2 tb spoons each
  • Ghee 3 to 4 tea spoons
  • Turmeric powder 1/4 tea spoon


How to make Sweet Puttu?

Wash the rice well in water and soak in water for 4 hours.
Drain the water out and spread the rice on a cloth for 3 hours.
Boil water 2 cups with turmeric powder till small bubbles form at the sides. Switch off and keep the water aside.
Powder the Raw rice  in a blender to very fine powder.
Sieve it well and have only the fine powder and take away the residues.
Now dry roast the fine powder in a pan in medium flame stirring continuously till it becomes light golden brown giving out fantastic aroma.  (it will take at least 12 to 15 minutes)
At this time you can see small lumps forming in the flour.
Switch off the stove and allow to cool.
Sieve it again and take the small lumps out and powder them again and add it with the sieved flour.
Now take the flour in a broad bowl.Drizzle some turmeric water on the flour and mix well with hand.
When you hold handful of flour and tightly press  it, you must be able to make a ball. But it should not be like a chappati dough. When you drop it it should become a flour.
Now in a white cloth add this flour close it and steam it in a steamer or idly cooker for 10 to 12 minutes. 
Take it out and place in a bowl add two tea spoons of ghee to it mix gently with a potato masher or hand without lump and keep aside.
Heat the jaggery with just 100 ml water and keep stirring.
To check the syrup consistency have a bowl of water at your side.
Keep stirring till the syrup thickens. Add cardamom powder too to it.Then and there drop few drops of syrup in water.
When it settles down in the water you should be able to collect it and make a strong tight ball. That is the correct consistency of the syrup.
Now pour the syrup on the flour  and mix well.Bring the mixed flour together close the bowl and keep aside un disturbed for 1 hour.
After one hour add roasted cashews and coconut pieces to it and stir well.
You will be amazed to see the fine, flowing, non sticky and  soft sweet puttu.
