Instead of making Halwa exclusively out of carrot or beetroot making them combined gives good colour and yields more quantity . Moreover grating of beetroot is easier and just two large size beets yield more stuff. Adding some Khoya / Khoa gives a mild chewy texture and makes it delightful...
Grated Beetroot 2 cups Grated Carrot 1 cup Sugar 1 cup Milk 2 cups Khoa / Khoya 100 gms Ghee 4 to 6 tea spoons Roasted nuts as preferred
How to make Beet and Carrot Halwa?
Wash and peel the veggies. Grate them and keep aside. Heat a pressure pan with 2 tea spoons of ghee.
Put the grated stuff into the pan and stir for a minute. Pour the milk in to the pan and pour 2 cups of water. Close the pan and pressure cook the stuff up to 6 or 7 whistles. Once the pressure is released open the pan and again switch on the stove.
Keep stirring till the stuff becomes dry. Add the sugar and once again it becomes watery after adding sugar.
Now add two tea spoons of ghee and keep stirring. When it thickens add the Khoya and stir well till the moisture evaporates.
Add remaining ghee, cardamom powder and roasted nuts. Serve hot or chilled.
(If you use Khoya without sugar , follow this sugar measurement. If you use sweet khoya reduce the quantity of sugar accordingly)
