Ingredients for making Ennai Kathirikkai Kuzhambu:
- Small Brinjals 12
- Chopped onions from 1 Onion
- Chopped Tomatoes from 2 Tomatoes
- Tamarind Juice from a lemon size tamarind 3 cups
- Salt to tatse
- Turmeric powder 1/2 teaspoon
- Sambar powder 3 tea spoons
- Jagerry powder 1 tb spoon
- Fenugreek 1 teaspoon
- Sesame / Gingelly Oil 5 table spoons
How to make Ennai Kathirikkai Kuzhambu?
In a pan dry roast the fenugreek to golden brown, powder it and keep aside.
Wash the Brinjals well, remove the stems and make slits, keep aside.
Heat a pan with oil.
Fry the brinjals for 3 mins in medium flame.
Add onions and tomatoes one by one and fry for another 5 minutes.
Now throw in all the powders mentioned above except Jaggery and fry till the Brinjals are coated well with the masalas and fried.
Pour in the tamarind juice, add jaggery.
Boil till the gravy thickens and oil separates.
Do the seasoning with mustard and curry leaves and add to the kuzhambu.
