Carrot Stir Fry with Freshly Ground Spices


Though we use carrot in different ways in our regular course of cooking, we feel sometimes that the plain carrot curry does not go well as the side dish because of its sweetness. Try this carrot curry and relish the fantastic taste .....

Ingredients for making Carrot Stir Fry

Carrot 500 gms


Turmeric powder

Oil 2 tb spoons











For Curry Powder:

In a kadai heat 3 tea spoons of oil and fry Coriander seeds 2 tb spoons, Chana dal 1 tb spoon and 6 red chillies to brown and powder them after they get cooled down. Keep it aside.

Method for making Carrot Stir Fry:

Cut the carrot into pieces.

Heat the kadai with oil.

Saute it with mustard seeds and urad dal. After they get spluttered, add salt to it and turmeric powder.

Now add the carrot pieces and stir well.

Close the kadai with a lid and keep the flame in low for 15 minutes. This will make the carrot to get cooked well.











Open the lid and stir well. Add the grounded spice powder and mix well.

Keep the flame medium and allow it to get fried well.
