Vellai Thenkuzhal is the most popular snack of Tamilnadu done on various occasions like Diwali, KrishnaJeyanthi and Karthigai. It is a very easy to make snack and can be given to even small children since purely made of rice flour without any hot spices. The white colour and melting crispness is the specialty of this popular snack.

Ingredients for making Vellai Thenkuzhal:
- Rice flour 3 cups
- Uradh dhal powder 2 table spoons
- Ghee or unsalted butter 1 table spoon
- Cumin seeds 2 tea spoons
- Hing powder 1/2 tea spoon
- Salt 3/4 tea spoon
- Oil for frying
Method for making Vellai Thenkuzhal:
If you are using either home made processed rice flour or rice flour bought from store make it warm by roasting in a kadai for few minutes till you feel the warmth in the flour. (The colour should not change)
Dry roast split Urad dhal to light brown in a kadai and powder it in a mixie softly and sieve it.
Mix all the ingredients mentioned above (Except Oil for frying) well with hand. Then add water little by little and make a soft dough.
Heat the oil. Take a ball of dough and put in the Thenkuzhal mould. Squeeze it into the oil.
Fry till the Thenkuzhal is fried well.
Note:
When the thenkuzhal is squeezed into the oil the flame must be in high. Immediately after keep it in medium and cook. So that the murukku will be crispy and cooked well inside also.
