Coconut Rice (Thengai Sadham)

Coconut rice is the common and staple rice variety of Tamilnadu. It is a quick lunch box menu that makes the lunch delicious when had with pappad or any vegetable fry.

Ingredients for making Coconut Rice:

Freshly grated coconut from half coconut

Green chillies 2 

Red chilles 2

Boiled Rice 1 bowl (Rice required for 3 persons)

Curry leaves

Urad dal 2 tb spoon

Mustard seeds

Hing powder 1/2 tea spoon

Sugar 1/2 tea spoon

Ghee 2 tea spoons

Coconut oil 3 tea spoons







Method for making Coconut Rice:

Heat a heavy bottomed wok with coconut oil. Saute it with mustard seeds. After it splutters add the urad dal and fry till it changes the colour. Add red chillies and green chillies and hing powder. Then add the curry leaves, cashews and required salt and mix well. Transfer the stuff to a plate or bowl.
















Wash the wok and heat it. Dry roast the grated coconut in low flame for 2 minutes. Don't over fry it to brown. Add 1/2 tea spoon of sugar to it. Now add the sauted items to it and mix well. Add the boiled rice and ghee and mix well in low flame. Switch off the stove. The yummy coconut rice is ready now!!!!
