Carrot Halwa (Gajar Halwa)

The lovely dessert of North India is Carrot Halwa and a real delight with the richness of milk, nuts, ghee ,grated carrots and flavoured with cardamom and pistachios.I usually make this sweet for birthdays or anniversaries since it is the favourite sweet of my friends and family members.

Preparation Time: 20 minutes
Cooking time: 35 minutes


Ingredients for making Carrot halwa:


Grated carrot 3 cups  Sugar 1 1/2 cups
Ghee 4 tb spoons
Whole Milk 1 litre
Cardamom powder 1/2 tea spoon
Chopped nuts like pistachios, almonds and cashews 2 tb spoons




How to make Carrot Halwa:


Take a pressure pan or pressure cooker. Boil milk in it in medium flame till it becomes half in quantity.
Make a point to remove the milk layers sticked at the corners with a ladle and add to the boiling milk.







Add the grated carrot into it and stir. Close with its lid. Put the weight.
Let it cook up to 3 or 4 whistles.


Switch off the stove.
Wait for the steam to release.
Open the lid and again switch on the stove.
Let it boil till the milk completely gets absorbed by the carrot.
At this stage add the sugar and stir well.










After adding sugar the sugar melts and the stuff becomes loose.
Again keep stirring.
Add ghee 3 spoons. Keep stirring and add the ghee at intervals little by little.









When everything binds together and comes without sticking into the pan bottom, add the cardamom powder and switch off the stove.
Garnish with nuts and dry fruits.
