Vadai Mor Kuzhambu (Dal fritters in Spicy buttermilk Gravy)

An Authentic and traditional recipe of Tamilnadu  which is made during festivals and auspicious days. The soaked vadas in buttermilk gravy melts in mouth  and gives exotic taste..

Ingredients for making Vadai Mor Kuzhambu (Dal fritters in Spicy buttermilk Gravy)


For Fritters(Vadas)


Urad dal 4 tb spoons
Red chillies 2
Green chillies 2
Ginger 1 inch piece
Raw rice 1 tea spoon
Salt to taste
Oil 200 ml


For Butter Milk Gravy (Mor Kuzhambu)


Beaten curd (Buttermilk) with mild sourness 500 ml to the consistency of milkshakes
Green chillies 5
Coriander seeds 2 tea spoons
Chana dal 2 tea spoons
Cumin seeds 1 tea spoon
Raw rice 1 tea spoon
Grated Coconut 4 tb spoons




How to make the Vadai Mor Kuzhambu (Dal fritters in Spicy buttermilk Gravy)?



Step 1


  • Soak the Uard dal, chillies and raw rice in water for 1 hour. 
  • Soak the Coriander seeds, chana dal, raw rice and cumin seeds in water for 30 minutes 













Step 2

  • Grind the soaked Step 2 items adding coconut and water  to fine paste . 
  • Add this stuff to the butter milk with required salt and mix well . 
  • Heat a pan with 2 tea sppoons of coconut oil. Saute it with mustard seeds and 1 tea spoon of fenugreek.
  • Once the fenugreek becomes golden brown add a pinch of turmeric powder and  curry leaves.Pour the buttermilk stuff into it and mix well.
  • Wait till the foam and bubbles start to form. Give a stir and switch off the stove.


Step 3













  • For making the vadas (Fritters) drain the water from the soaked items. 
  • Add required salt and ginger piece and grind to to fine smooth batter. If needed just sprinkle some water while grinding.
  • Heat 200 ml of oil in a pan for deep frying.
  • While the oil gets heated make a bowl of warm water ready side by.
  • Once the oil is hot enough, drop some balls of urad dal batter into the oil and deep fry to golden brwon.
  • Transfer these balls to the bowl with warm water and allow them to get soaked in waater for just 3 to 5 minutes. Then transfer them draining the water to the Gravy (Morkuzhambu)
  • Now the hot, sour and spicy More kuzhambu with Vadas are ready to serve.
