Sukhdi (Whole Wheat Flour Burfi)

Ingredients for making Sukhdi:

  • Whole wheat flour 1 cup  (200 gms)
  • Grated or Powdered jaggery without any lumps 3/4 cup
  • Melted ghee (Clarified Butter) 1/2 cup


How to make Sukhdi?

First Grease a plate with ghee and keep ready.
Heat a heavy bottomed pan with ghee.
Once it is heated keep the flame to medium and add the wheat flour and keep frying.
Patiently without burning the flour fry it at least for 10 mints or till nice aroma comes and the flour becomes golden brown.
Now increase the flame to high give a fast stir and switch off the stove.
Immediately add the jaggery powder to the pan and stir fastly for just 60 to 75 seconds.
The jaggery melts with the heat of the pan and flour and binds with wheat flour well. (At this stage I added some cardamom powder for flavour)
Transfer the stuff to the greased plate and spread well with the ladle.
After a  minute with a knife make pieces.
Take them out after it gets cooled well.
For garnishing you can add any dry fruits or nuts and it is purely optional.You can also sprinkle some roasted and coarsely powdered peanuts.

  2. Since you are adding the jaggery after switching off the stove it wont become hard
