Radish Stir Fry (Mullangi Poriyal)

I made this stir fry and served without telling that it is made of Radish. Asked my family members and my colleagues during lunch time to find out its made of which vegetable. They told turnip, cabbage, Chow chow, cucumber etc., but when I said its made of Radish, they were surprised. Because this recipe does not have the pungent smell of radish which makes most of the people to hate this healthy vegetable. You can make this very easily with the richness of coconut and flavour of ginger and green chilli and get the benefits of Radish fully...

How to make the Radish stir fry?

Take 2 tb spoons of Grated coconut, 1 green chilli, an inch piece of ginger and run it in a blender without adding water. Keep this coconut mix aside.

Peel off the skin of 1/2 kg of  radish and in a vegetable grater grate the radish and keep aside.

Heat a Pan with 2 tea spoons of oil and do the seasoning with mustard seeds, urad dal and curry leaves. When the dals tend to become brown add some finely chopped green chillies and required salt to the oil and stir well.

Now transfer the grated radish in to the pan and stir well. Don't cover the pan.

Let it get fried in high flame till the water dries out completely.
When you are sure that the water in the radish is completely evaporated add the coconut mix to the pan and stir for few seconds and switch off the stove.

The healthy Radish stir fry is ready to have with rice or roti.
