Spicy Rice Flour Roti

A perfect, delicious, appetizing and traditional Roti  made with  little variation adding carrots to make it healthier. An ideal , light tiffin and easily digestible snack. With the Rice flour in hand, You can make it at any time instantly adding whatever leftover veggies you have..

Ingredients for making Spicy Rice Flour Roti:

  • Rice flour 2 cups (250 gms)
  • Grated carrot from 2 carrots
  • Finely chopped green chillies and ginger 1/2 tea spoon each
  • Shredded coconut 1 tb spoon (Optional)
  • Oil 3 tea spoons
  • Mustard seeds, urad dal, chana dal, hing powder 1/4 tea spoon and curry leaves for seasoning
  • Chopped coriander leaves
  • Salt to taste

How to make Spicy Rice Flour Roti?

Add water to rice flour with some salt and bring it to poring consistency like milkshake.
Pour it in a heavy bottomed pan and keep stirring in medium flame.
In few minutes it turns to thick batter and in another two minutes it becomes like a roti dough.
When the white colour becomes dull and transparent switch off the stove.
Keep it aside in a broad plate or vessel to get cooled.
Heat a sauteing pan with 2 tea spoons of oil.
Add mustard seeds, urad dal and chana dal. Once they splutter and become brown add curry leaves and hing powder. Pour it on the rice dough.
Add carrot, green chillies, coriander leaves and ginger to the rice dough and knead well with hand greasing the palm.
Bring it to a soft dough. Make big lemon size balls of it.
Take a polythene sheet or a silver foil sheet and grease it with few drops of oil and place the ball on it.
Patter it with fingers gently and make a thin roti.
Heat the tawa and drizzle few drops of oil. Transfer the roti to it and cook on both sides to golden colour and serve hot with any pickle or thokku.
