Making Payasam / Kheer is mandatory in most of the households in Tamilnadu whenever son-in-law visits family. Sometimes it happens, he visits home uninformed and during those occasions we make this instant Besan Flour Kheer and hence it gets the name Mapillai Payasam. The besan Flour when fried in Ghee gives awesome flavour to this Besan Flour Kheer. Since the procedure of making this Besan Flour payasam is very simple and can be done with very minimum ingredients it really gives in hand when we have unexpected guests at home. Ingredients for making Besan Flour Kheer / Kadalai Maavu Payasam:
- Besan flour 3 tb spoons
- Milk 500 ml
- Sugar 2 cups
- Cardamo powder 1/2 tea spoon
- Saffron strings few soaked in warm milk
- Ghee 5 tea spoons
- Cashews and Raisins
Method for making Besan Flour Kheer / Kadalai Maavu Payasam:
Heat a Pan with 2 teaspns of ghee and fry cashews and raisins to golden brown, take them out and keep aside.
Heat the pan in medium flame with 3 more tea spoons of ghee and fry the Besan flour without burning it till nice aroma comes.
Slowly add 200 ml of milk to it and stir breaking the lumps.
Pour the rest of the milk also.
Once it starts boiling well , add 2 cups of sugar to it.
Wait for 5 more minutes.
Add the cardamom powder and the saffron milk.
Switch off.
Garnish with the roasted nuts,
Serve hot or chilled.
