Ingredients for making Brinjal / Eggplant Shallow Fry:

  • Big Brinjals / Egg Plants 4
  • Besan flour 2 tb spoons
  • Rice flour 2 tb spoons
  • Corn flour 2 tb spoons
  • Garam masal powder 1/4 tspn
  • Red chilli powder 1/2 tea spoon
  • Required salt
  • Oil 4 tb spoons

How to make Brinjal / Eggplant Shallow Fry?

Wash and wipe the Brinjals well.


Remove the stem and cut into thin round slices.
Add water to all the flours, salt, chilli powder and garam masala powder and make a thick batter like a paste.

Place the slices on the batter and coat on both sides.
heat the pan with 4 tbspns of oil.

Shallow fry the coated slices on both sides to golden brown.
Brinjal / Eggplant Shallow Fry tastes heavenly when had with Sambar Rice.
