It has been a long time wish to make Maize flour roti, but I was postponing it since Maize flour has very less adhesive nature. Even after browsing so many blogs I didnt get confidence. So,I switched over from making roti and landed in making Maize flour Paratha and amazingly the outcome was very successful...
Maize Flour 2 cups Whole wheat Flour 4 cups Oil 2 tb spoons Salt to taste Red chilli powder 1/2 tea spoon Ajwain seeds (Omam) 1/2 tea spoon
How to make Maize Flour Paratha?
Add water and 1 tb spoon of oil with required salt and knead the roti dough with the whole wheat flour and keep aside.
Dry roast the ajwain seeds in a pan for a minute in low flame and powder it. Add the powder, chilli powder and salt to the maize flour with 1 tb spoon of oil and knead to a soft dough by adding water little by little.
Make lemon size balls of it and keep aside.
Now make small rotis out of the wheat dough and keep the maize flour balls in the middle. Bring all the corners to the middle and seal it.
Dust the ball with the wheat flour and again roll into thick rotis.
Heat a tawa and cook the Paratha on both sides with oil or ghee.
These parathas tastes yummy with fresh creamy butter.
